🍓Strawberry Matcha White Chocolate Chip Cookies🍵
These cookies offer a delightful balance of earthy matcha, sweet strawberry, and creamy white chocolate.
Yields: Approximately 18-24 cookies Prep time: 15 minutes Chill time: 30 minutes (recommended) Bake time: 10-12 minutes per batch
Ingredients:
- 1 stick (1/2 cup or 113g) unsalted butter, softened
- 1 cup packed light brown sugar
- 3 tablespoons granulated white sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 2 tablespoons S&V Strawberry Matcha powder
- ½ cup white chocolate chips
Instructions:
- Whisk wet ingredients: In a large bowl, whisk together the melted butter, brown sugar, and white sugar until well combined and smooth.
- Incorporate flavor: Whisk in the vanilla extract and eggs one at a time, mixing until just combined after each addition.
- Combine dry ingredients: In a separate medium bowl, whisk together the flour, baking soda, and salt. until evenly distributed.
- Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing on low speed (or by hand) until just combined. Be careful not to overmix. Add the S&V Strawberry Matcha powder last, this ensures the matcha is incorporated throughout the dough.
- Fold in chips: Gently fold in the white chocolate chips until they are evenly
distributed throughout the dough. - Chill the dough (recommended): Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This helps prevent the cookies from spreading too much during baking and enhances the flavor. If you’re in a hurry, you can skip this step, but the cookies might be thinner.
- Preheat oven & prepare baking sheets: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop dough: Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake: Bake for 10-12 minutes, or until the edges are lightly golden and the centers still look slightly soft.
- Cool: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
